Rainbow salad

    A super-delicious salad, which is packed full of fruit and vegetables. Tomatoes are tossed with mangoes, avocados, orange pepper, blueberries, red onion and coriander in a pineapple-lime dressing. It's the perfect summer salad.

    Serves: 8 

    • 3 vine-ripened tomatoes, diced
    • 2 mangoes, peeled, seeded and cubed
    • 2 avocados, peeled, pitted and cubed
    • 1 orange pepper, chopped
    • 150g fresh blueberries
    • 1 red onion, chopped
    • 1/2 bunch coriander, chopped
    • 4 tablespoons fresh lime juice
    • 125ml pineapple juice

    1. Place the tomato, mango, avocado, pepper, blueberries, onion and coriander into a large bowl. Pour the lime juice and pineapple juice over the top. Stir gently until evenly combined. Serve immediately for the freshest taste.

    This had a wacky flavour but was fun to make. Also because of the many colours it is easy to make it look great in a simple dish  -  14 Nov 2017


    Let this sit in the fridge for 24 hours!!! I made and served it yesterday and it was just OK. The flavors were a little rough and it wasn't much of a hit. This morning it is absolutely FANTASTIC! I am eating it right now with Stacy's Simply Naked Baked Pita Chips and it is divine!     This would have been so good without the onion. I thought the flavor of the onion was extremely overpowering. I figured it would be, so I cut it down but only using a half of onion, but it should have been out of the recipe completely. I felt like I wasted all of those good fruits and veggies because of that added onion. But this would have easily been a five star recipe if it stated to let the salad marinate for at least an hour, double the mango stated, and of course, no onion.  -  25 Feb 2009  (Review from Allrecipes US | Canada)
