900g beetroots, peeled and sliced
3 tablespoons dark brown soft sugar
3 tablespoons vinegar
4 tablespoons water
1 tablespoon cornflour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Place the beetroots into a large saucepan. Pour in enough water to cover the beetroots by 2.5cm. Bring to the boil over high heat, then reduce heat to medium-low, cover and simmer until the beetroots are easily pierced with a fork, about 10 minutes; drain.
Whisk together the dark brown soft sugar, vinegar, water, cornflour, cinnamon, nutmeg and cloves in a saucepan. Add the beetroots and the butter, turn the heat to medium and cook, stirring constantly, until the mixture comes to the boil. Cook until the sauce thickens slightly, about a minute or two. Serve beetroots hot or cold.
