Spiced beetroots

    This is a wonderful beetroot dish, which is deliciously different. Beetroots are boiled until tender and served with a spiced butter sauce. Serve as a hot or cold side dish.

    Ingredients
    Serves: 4 

    • 900g beetroots, peeled and sliced
    • 3 tablespoons dark brown soft sugar
    • 3 tablespoons vinegar
    • 4 tablespoons water
    • 1 tablespoon cornflour
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 30g butter

    Method

    1. Place the beetroots into a large saucepan. Pour in enough water to cover the beetroots by 2.5cm. Bring to the boil over high heat, then reduce heat to medium-low, cover and simmer until the beetroots are easily pierced with a fork, about 10 minutes; drain.
    2. Whisk together the dark brown soft sugar, vinegar, water, cornflour, cinnamon, nutmeg and cloves in a saucepan. Add the beetroots and the butter, turn the heat to medium and cook, stirring constantly, until the mixture comes to the boil. Cook until the sauce thickens slightly, about a minute or two. Serve beetroots hot or cold.

    I made these for thanksgiving and they were a huge hit! My husband and I love beets but i have never had them prepared like this before, but i loved the apple, and the holiday spicing was wonderful! Just the right amount of spicy and sweet.     Freezing ahead of time was the initial appeal for me, but these were really good using fresh beets, and I wanted you to know that I used Splenda Brown Sugar Blend and it was still great.
