    About this recipe: A simple and delicious Italian starter or appetiser. Ready-made cheese tortellini are breaded and deep-fried to perfection. Serve with tomato sauce for dipping, if desired.

    Serves: 6 

    • 450g fresh cheese tortellini
    • 4 tablespoons breadcrumbs
    • 4 tablespoons cornflake crumbs
    • salt and pepper to taste
    • dried parsley, to taste
    • oil for deep frying
    • 2 eggs, lightly beaten

    1. Cook tortellini according to package directions. Rinse under cool water and allow to cool slightly.
    2. In a large resealable plastic bag, combine breadcrumbs, cornflake crumbs, salt, pepper, and parsley.
    3. Heat oil in a deep fat fryer or deep frying pan over medium heat. In small batches, dip the tortellini in egg and place in resealable bag. Shake to coat and set aside on a plate until the oil is hot.
    4. In batches, deep fry breaded tortellini until golden brown. Serve with passata for dipping.
