Pumpkin Spice Bars

    A moist spiced pumpkin cake is topped with a cream cheese frosting, cut into bars and served. Enjoy as a dessert, snack, for afternoon tea or elevenses.

    Makes: 25 bars

    • 4 eggs
    • 400g caster sugar
    • 250ml vegetable oil
    • 425g pumpkin puree
    • 250g plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cloves
    • 450g cream cheese frosting
    • 60g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease and flour the bottom and sides of a 25x38cm or similar sized Swiss roll tin.
    2. In a large bowl, combine eggs, sugar, oil and pumpkin puree; beat until smooth. Stir in the flour, baking powder, bicarbonate of soda, cinnamon, ginger, salt and cloves.
    3. Spread batter into prepared tin. Bake for 30 minutes in the preheated oven or until a skewer inserted into the cake comes out clean. Allow to cool completely.
    4. Frost with cream cheese frosting and sprinkle top with nuts. Cut in to 5cm by 3.75cm bars. Store in refrigerator.

    Thought the batter looked very wet but it cooked into a really nice moist cake, took more like 40 to 45 mins and I thought it was nicer than carrot cake that I make to a similar recipe. I used a cream cheese frosting recipe from another pumpkin cake recipe on allrecipes that was a butter, cream cheese, icing sugar mix. Used my own pumpkin puree made from baked homegrown pumpkin rather than a tin. Will definitely be making again.  -  06 Nov 2016


    I made this in a 9x13 pan and cooked for 38 minutes - came out great. Topped with commerical cream cheese frosting. More like a spice cake, than "bars." But really very good. I'd make it again.  -  18 Nov 2002  (Review from Allrecipes US | Canada)


    My friend made this cake for a baby shower and it disappeared in no time flat. She made a simple cream cheese frosing from 1 stick butter/1 package cream cheese, 1 tbsp vanilla and 2 cups powdered sugar, and the cake melted in your mouth.
