    About this recipe: This salsa is not only delicious, but it's also quick and easy to make. Sweetcorn is mixed with olives, tomatoes, red onion, red pepper, chillies and avocados. Serve as a dip with tortilla chips or as a condiment/sauce.

    Serves: 16 

    • 1 1/2 (198g) tins sweetcorn, drained
    • 75g sliced black olives, drained
    • 275g diced plum tomatoes
    • 125g diced red onion
    • 1 red pepper, seeded and diced
    • 1 1/2 teaspoons finely chopped Scotch bonnet chilli or to taste
    • 1 avocado, peeled, pitted and diced
    • 2 tablespoons olive oil
    • 2 tablespoons fresh lime juice
    • 1 teaspoon salt

    1. Mix together sweetcorn, olives, tomatoes, onion, red pepper and chillies in a large bowl. Gently fold in diced avocado, olive oil, lime juice and salt.
