Garlic Ginger Tofu

    This easy, braised tofu dish is great served with steamed rice and vegetables for an easy vegan weeknight meal.

    Serves: 8 

    • 3 tablespoons rapeseed oil
    • 4 cloves garlic, minced
    • 1 good knob root ginger, minced
    • 1 lime
    • 1 tablespoon soy sauce, or to taste
    • 900g (2 lb) firm tofu

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Heat oil in a wok or frying pan over medium heat. Stir in garlic and ginger, and cook for 1 minute. Add tofu to the pan with soy sauce, and stir to coat. Cover, and continue cooking for 20 to 30 minutes.
    2. Squeeze lime juice over tofu before serving.

    The tofu took in a lot of oil during cooking, but then it went with a stir fry and I use very little oil in that, so it worked really well...  -  16 Jul 2011
