About this recipe: This is a hearty and delicious Italian soup. Venison is simmered with beans and vegetables in a tomato soup base. Enjoy with crusty fresh bread, if desired. It's the perfect soup for the cold winter months.

Serves: 8 

  • 450g minced venison
  • 1 onion, chopped
  • 1 (400g) tin chopped tomatoes
  • 450g passata
  • 700ml water
  • 1 tablespoon finely chopped garlic
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 (400g) tin pinto beans
  • 1 (400g) tin cut green beans
  • 1 carrot, chopped
  • 1 courgette, chopped
  • 225g fusilli (twists) pasta

  1. Brown venison, onion and garlic over medium heat until meat is no longer pink. Add tomatoes, passata, water and spices. Bring to the boil and then simmer for about 30 minutes.
  2. Stir in chopped green beans, carrot and courgette. Simmer soup for 90 minutes.
  3. Add pasta and cook until tender. Top individual servings with grated cheese and serve.
