Wasabi guacamole

    This fusion recipe is a twist on the classic guacamole. Avocado is mashed with hard-boiled eggs, wasabi and other seasonings. Use as a dip with tortilla chips.

    Ingredients
    Serves: 6 

    • 2 eggs
    • 2 ripe avocados, peeled and chopped
    • 1 onion, finely diced
    • 1 tomato, finely diced
    • 3 tablespoons fresh lime juice
    • 1 teaspoon hot sauce
    • 1/2 teaspoon Worcestershire sauce
    • 1 teaspoon sea salt
    • 1/4 teaspoon ground black pepper
    • 1 teaspoon wasabi powder
    • 1 spring onion, thinly sliced
    • 1 tablespoon chopped fresh coriander

    Method

    1. Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by at least 2.5cm. Cover the saucepan and bring the water to the boil over high heat. Once the water is boiling, boil for 9 minutes, then remove from the heat. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel and dice the eggs.
    2. Use a fork to mash the avocados in a large bowl. Stir in the hard-boiled eggs, onion, tomato, lime juice, pepper sauce, Worcestershire sauce, salt, pepper and wasabi powder. Mix well; taste, and add additional salt and pepper if necessary.
    3. Place guacamole in serving bowl and garnish with spring onion and coriander. Cover and refrigerate for 1 hour to allow flavours to blend.

    This is a great guac recipe!! wasabi powder adds a subtle kick - not overpowering at all, but you know it's there. I forgot to add the cilantro (not a huge fan anyway) but the guac didn't need it. Delicious!  -  19 Jul 2010  (Review from Allrecipes US | Canada)

    i never liked guaccamole, never cared much for it. i just needed a recipe for a potluck i was going to and everyone loved this! it made me look like a pro and i dont kno a thing about mexican food. this recipe made me a fan of guaccamole, it has just the right kick to it to make it stand out. some changes tho, like some reviewers said add one more avacado and cut down on the onion and it's perfection!  -  23 Feb 2010  (Review from Allrecipes US | Canada)
