Lemonade with Watermelon

    This is a deliciously light and refreshing drink. A glassful of ice is topped with watermelon puree and homemade lemonade. It's the perfect summer drink to enjoy all year long.

    Serves: 12 

    • 100g caster sugar
    • 125ml water
    • 615g cubed watermelon
    • 750ml cold water
    • 125ml fresh lemon juice
    • 6 cupfuls ice cubes

    1. Place the watermelon into a liquidiser. Cover and puree until smooth. Strain through a fine mesh sieve.
    2. Bring sugar and 125ml water to the boil in a saucepan over medium-high heat until sugar dissolves, about 5 minutes. Remove from heat. Stir in 750ml of cold water and the lemon juice. Divide the ice into 12 glasses and scoop 2 to 3 tablespoons of watermelon puree over the ice, then top with the lemonade. Gently stir before serving.

    I liked this a lot, I did not however strain it, I i really pureed the mess out of it. My melon was very sweet, so i cut back the sugar a bit. Combined with a nice spiced rum this also made a lovely adult beverage  -  26 Jun 2010  (Review from Allrecipes US | Canada)


    This is light, refreshing and very simple to prepare. I did strain my watermelon through a fine mesh sieve. I mixed the lemonade mix and watermelon together in a pitcher and just poured over ice.
