About this recipe: These cookies are super-soft and moist. The added white chocolate chips complements with the pumpkin exceedingly well. Enjoy for afternoon tea, elevenses or general snacking.

Serves: 18 

  • 280g plain flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon bicarbonate of soda
  • 225g unsalted butter
  • 330g dark brown soft sugar
  • 250g pumpkin puree
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 360g white chocolate chips
  • 110g chopped pecans

  1. In a small bowl, whisk together the flour, pumpkin pie spice and bicarbonate of soda.
  2. In a medium bowl, with an electric mixer, cream butter and sugar. Beat in pumpkin puree. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Stir in the white chocolate and pecans.
  3. Drop dough by rounded tablespoon 5cm apart on an ungreased baking tray. Bake at 150 C / Gas 2 for 20-22 minutes until just set.
