    About this recipe: This great side salad is not only quick and easy to make, it also tastes fab. Avocado is tossed with tomatoes and red onion in a red wine vinaigrette.

    Serves: 3 

    • 1 large avocado, peeled, pitted and cut into 1.25cm cubes
    • 2 plum tomatoes, cut into 1.25cm cubes
    • 1/4 red onion, cut into 1.25cm cubes
    • 2 tablespoons red wine vinaigrette

    1. Stir together the avocado, plum tomatoes, red onion and red wine vinaigrette dressing in a bowl.

    All my favorite ingredients in one bowl. Delish! I served this in small martini glasses with shredded romaine in the bottom. Make sure you give the avocado a good pinch of salt - it really brings out the flavour.  -  20 May 2013


    I love serving this as a side dish in the summer when the New Jersey tomatoes are in season. I always toss in some fresh basil from my garden and use balsamic vinegar in place of the red wine vinegar. So simple, yet so delicious!  -  06 Jul 2009  (Review from Allrecipes US | Canada)
