Steamed Pork Spare Ribs

    These Chinese spare ribs are tender and delicious. The shrimp paste added in the marinade, flavours the ribs really well. Serve as a starter, dim sum or with freshly cooked rice.

    Makes: 4 - 6 servings

    • 675g pork spare ribs, chopped into 2.5cm pieces
    • Marinade
    • 3 tablespoons shrimp paste
    • 2 tablespoons fish sauce
    • 2 tablespoons black soy sauce
    • 1 tablespoon sugar
    • 1 tablespoon cornflour
    • 1 tablespoon groundnut oil
    • 1 tablespoon water

    1. In a large shallow dish, mix together the shrimp paste, fish sauce, black soy sauce and sugar. Add the spare ribs, stir to coat and allow to marinate for 20 minutes.
    2. In another bowl, mix together the cornflour, oil and water. Stir in with the spare ribs, let marinate for 5-7 minutes more.
    3. Steam the spare ribs for 15 minutes over high heat. Serve.


    Shrimp paste and black soy sauce can be purchased in Chinese/Oriental speciality stores.
