Thai Sweet and Sour Chicken

    This is a Thai take on sweet and sour chicken. Chicken is stir-fried with garlic, onions, green peppers and pineapple, before being simmered in a sweet and sour sauce. Serve with freshly cooked rice.

    Makes: 4 - 6 servings

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 5-6 chicken breast fillets, sliced into thin strips
    • Sauce
    • 2-3 tablespoons water
    • 2 tablespoons tomato ketchup
    • 2 tablespoons sugar
    • 1 tablespoon white vinegar
    • 4 teaspoons fish sauce
    • 1 tablespoon lemon juice
    • 2 teaspoons chilli sauce
    • 1 tablespoon oil
    • 1 tablespoon finely chopped garlic
    • 1 tablespoon oil
    • 2 medium onions, sliced
    • 2 medium green peppers, finely sliced
    • 6 slices tinned pineapple, quartered, 2 tablespoons liquid reserved
    • 2 tablespoons water
    • 8-10 basil leaves

    1. Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the chicken, let marinate for 15 minutes.
    2. Meanwhile, make the sauce. In a small bowl, mix together the water, tomato ketchup, sugar, vinegar, fish sauce, lemon juice and chilli sauce. Set aside.
    3. Heat 1 tablespoon oil in a frying pan over high heat. Stir-fry the garlic until aromatic, about 2-3 minutes. Stir in the chicken and cook until medium done, around 2-3 minutes. Set aside.
    4. Heat 1 tablespoon oil in the same frying pan over high heat. Stir-fry the onions until soft, 3-4 minutes. Add the green peppers and pineapple, stir well.
    5. Add the chicken back into the pan. Stir in 2 tablespoons water, 2 tablespoons pineapple liquid, basil and cook for 4-6 minutes.
    6. Mix in the sauce and stir until the sauce becomes thick, 2-3 minutes. Serve.

    A great sweet and sour, fantastic taste and a really easy to follow recipe. I used pork instead of chicken. My husband usually makes the sweet and sour dishes but I made this one and he said its better than his. Woo hoo.  -  16 Mar 2015
