Chicken in Sweet and Sour Sauce

    A simple, yet delicious sweet and sour dish. Chicken is stir-fried with onions and garlic, before being simmered in a delectable sweet and sour sauce. Serve with freshly cooked rice.

    Makes: 4 - 6 servings

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 450g chicken, cut into chunks
    • Sauce
    • 4 tablespoons tomato ketchup
    • 2 tablespoons Worcestershire sauce
    • 1/3 teaspoon salt
    • 2 tablespoons caster sugar
    • 4 tablespoons water
    • 1 dessertspoon soy sauce
    • 1 dessertspoon HP original sauce
    • 1 tablespoon oil
    • 1 tablespoon oil
    • 1 dessertspoon chopped garlic
    • 1 medium onion, finely sliced
    • 1 teaspoon salt

    1. Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the chicken, let marinate for 20 minutes.
    2. Meanwhile, in a small bowl, mix together the ketchup, Worcestershire sauce, salt, sugar, water, soy sauce and HP sauce to make the sauce. Set aside.
    3. Heat a large frying pan with 1 tablespoon oil over high heat. Fry the chicken until evenly browned and 80% cooked, about 3-4 minutes. Set aside
    4. In the same frying pan, heat 1 tablespoon oil over high heat. Stir-fry the garlic until fragrant, 2-3 minutes. Add the onion with salt and cook until soft, 3-4 minutes. Stir in the chicken and sauce, allow to heat through, 2-3 minutes. Serve hot.

    Cook's note

    If you like your sauce a little thicker, add a little bit of cornflour and water to the sauce at the end.

    I added a few additional ingredients - a small piece of fresh ginger grated, 50g, some beanshoots, a red chilli and some chopped green pepper. It was really tasty and I loved the sauce  -  28 Dec 2013
