Sausage and Tomato Pasta Bake

About this recipe: A delicious pasta bake recipe. Cooked pasta is topped with frankfurter sausages in a rich tomato sauce, before being sprinkled with mozzarella cheese and baked to perfection.

Serves: 4 

  • 350g dried pasta
  • 1 tablespoon olive oil
  • 1 tablespoon oil
  • 1 tablespoon chopped garlic
  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • 1 (350g) pack Herta frankfurters, thickly sliced
  • 2 tomatoes, chopped
  • 3 tablespoons tomato ketchup
  • 2 tablespoons tomato puree
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 125ml water
  • 115g Cheddar or mozzarella cheese, grated
  • 1 tablespoon dried basil

  1. Preheat the oven to 200 C / Gas 6.
  2. Bring a large saucepan of salted water to the boil. Cook the pasta for 8-10 minutes or until al-dente. Drain and toss with 1 tablespoon olive oil. Transfer to a baking dish and set aside.
  3. Heat a large frying pan with 1 tablespoon olive oil over high heat. Stir-fry the garlic until fragrant, about 2-3 minutes. Stir in the onion and salt and cook until soft, 3-4 minutes.
  4. Add the frankfurters and stir until heated through, 2-3 minutes. Stir in the tomatoes, tomato ketchup, tomato puree, salt, sugar and water. Stir well and bring to the boil.
  5. Once boiled, pour over the pasta and sprinkle with cheese. Bake in the middle of the preheated oven until the cheese turns golden, around 10-15 minutes. Sprinkle with dried basil and serve.
