Stir Fried Beef with Courgettes

    An excellent Chinese stir fry dish. Fillet steak is marinated, then stir-fried with garlic, onions and courgettes in a sweet oyster sauce. Serve with freshly cooked rice.

    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 450g beef fillet steak, thinly sliced
    • 1 tablespoon oil
    • 1 tablespoons finely chopped garlic
    • 1 medium onion, sliced
    • 1/2 teaspoon salt
    • 3 courgettes, chopped
    • Sauce
    • 2 teaspoons caster sugar
    • 1 tablespoon oyster sauce
    • 2 tablespoons water

    1. Marinate the beef in sugar, soy sauce and cornflour slurry for 15 minutes.
    2. Heat a large frying pan with 1 tablespoon oil over high heat. Stir-fry beef until 70% done, about 2-3 minutes. Set aside.
    3. Heat the same frying pan with 1 tablespoon oil over high heat. Stir-fry the garlic until aromatic, about 2-3 minutes. Add the onion and salt; cook until soft, about 3-4 minutes.
    4. Add the courgettes and 2 tablespoons of water and mix well. Cook until courgettes are tender, 2-3 minutes. Add the beef back into the pan with the oyster sauce. Stir and heat through for 1-2 minutes. Serve.
