Stir Fried Squid and Garlic Shoots

    A fantastically delicious and easy Chinese stir-fry dish. Squid is stir-fried with fresh garlic shoots. Serve as a main course with rice for one or as a side dish for two.

    Makes: 1 - 2 servings

    • 1 small squid, cleaned, tube sliced in half, scored and cut into 2.5cm pieces
    • Marinade
    • 1/2 teaspoon garlic salt
    • 1/2 teaspoon sesame oil
    • ground white pepper, to taste
    • 1 tablespoon oil
    • 1 tablespoon finely chopped garlic
    • 1 tablespoon oil
    • 250g fresh garlic shoots, chopped into 2.5cm pieces
    • 1 teaspoon salt
    • hot water, as needed
    • 1 teaspoon soy sauce

    1. Marinate the squid in garlic salt, sesame oil and white pepper for 15 minutes.
    2. Heat a medium frying pan with 1 tablespoon oil over high heat. Stir-fry the garlic and squid for 4-5 minutes. Set aside.
    3. Heat the same frying pan with 1 tablespoon oil over high heat. Stir-fry the garlic shoots for 2-3 minutes. Add salt and just enough hot water to cover 1/2 of the ingredients. Cover and simmer for 2-3 minutes.
    4. Return the squid back into the pan, add soy sauce and stir. Serve.


    If your local supermarket doesn't stock fresh garlic shoots, you can purchase them online.
