Blanch the asparagus in boiling water and oil for 3 minutes, drain and set aside.
Season the prawns with salt and pepper, then lightly dredge in cornflour.
Heat a large frying pan with 1 tablespoon oil over high heat. Stir-ry the garlic and shallots until aromatic, 2-3 minutes. Stir in the asparagus, prawns, cornflour slurry, sesame oil and salt to taste. Stir for 1-2 minutes or until heated through and serve.
