Pan Fried Tofu with Salted Egg

    A delicious and classic Chinese tofu dish. Tofu is pan-fried until browned, then coated with a sauce made with salted egg yolk and butter, before being garnished with spring onions. Serve with rice.

    Serves: 4 

    • 2 (396g) blocks firm tofu, each cut into 8 pieces and patted dry
    • 1 tablespoon garlic salt
    • 1/2 tablespoon ground white pepper
    • cornflour, as needed
    • 5 tablespoons oil
    • 30g butter
    • 2 tablespoons finely chopped garlic
    • 2 cooked salted eggs, whites finely diced and yolks mashed
    • 1 tablespoon finely chopped spring onion

    1. Season the tofu with garlic salt and white pepper. Let sit for 15 minutes, then dredge in cornflour.
    2. Heat a large frying pan with 5 tablespoons oil over high heat. Fry the tofu until browned on both sides, about 4-6 minutes. Drain and set aside.
    3. Heat the same frying pan with butter over medium heat. Saute the garlic until aromatic, 2-3 minutes. Reduce heat to low. Add the egg yolk and stir, turn heat off.
    4. Gently stir in the tofu and egg whites. Garnish with spring onion and serve.


    Cooked salted eggs can be found in Chinese/Oriental speciality stores.
