Pork ribs and lotus root soup

    A simple, yet delicious Chinese soup. This dish takes a little time to cook, but the results are really worth it. Pork spare ribs are simmered with scallops and lotus roots.

    Serves: 4 

    • 450g pork spare ribs, chopped into 2.5cm pieces
    • 3 (20cm) lotus roots, cleaned, peeled and cut into 1cm thick slices
    • 4-5 dry scallops, softed and finely chopped
    • water, as needed
    • salt, to taste

    1. Blanch the spare ribs in boiling water for 5-8 minutes. Rinse under cold water and set aside.
    2. Put the spare ribs, lotus roots and scallops into a pot. Add three times the volume of ingredients in water. Bring to the boil and boil for 30 minutes.
    3. Turn the heat down to medium and simmer for an additional 2-3 hours or until the lotus roots are soft. Keep an eye on the water level, you may need to top it up with hot water.
    4. The resulting volume of water should be about 1/2 of the ingredients in the pot. Stir and add salt to taste.


    Dry scallops and fresh lotus roots can be purchased in Chinese/Oriental speciality stores. If fresh lotus roots are unavailable, substitute in tinned and adjust the cooking time accordingly.
