Steamed sweet egg custard

    A delicious and simple Chinese dessert. A wonderful egg custard is made by combining rock sugar, water, full fat milk and eggs, then gently steamed until set. Perfect!

    Serves: 2 

    • 25g rock sugar
    • 4 tablespoons hot water
    • 250ml full fat milk
    • 2 large eggs

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Dissolve the rock sugar with the hot water. Mix in the milk and eggs.
    2. Pass the mixture through a sieve into two bowls. Cover each bowl with a piece of foil.
    3. Bring a large saucepan of water to the boil. Turn the heat down to low, place the bowls into a steamer insert, cover and cook for 10 minutes.


    Rock sugar can be purchased in Chinese/Oriental speciality stores.

    Cook's note

    Do not rush the cooking process. Otherwise you will have a rubbery egg custard.
