I am always asked why my basmati rice tastes so good. Whatever people tell you, without soaking it, it will never reach perfection! Follow this rule and few other simple steps, and you'll have perfect rice every time!

Ingredients

275g basmati rice
275ml water
salt
butter as required

Put the rice into a bowl and cover it with cold water. Leave it for 30 minutes (leaving it for longer won't do any harm).
Pour rice into a sieve and pour cold water over it again. Leave it to drain and then place it into a heavy pan with 275ml water and salt, add salt and bring to the boil, do not cover. As soon as the water starts to boil reduce the temperature and simmer for 15 minutes. Don't stir the rice. Try it after 15 minutes. If the rice is still hard, add a couple of tablespoons of cold water (still don't stir) and simmer for a further 5-10 minutes.
Remove from the heat and leave to stand for 10 minutes. You can now stir the rice or break it up with a fork, and if you like you can stir some butter into it.
