    About this recipe: I actually make this salad right throughout the winter. You can make a big dish all at once because the salad keeps for several days in the refrigerator and actually tastes better with every passing day.

    Ingredients
    Serves: 4 

    • 500g celery
    • 2 tablespoons lemon juice
    • 1 tablespoon white wine vinegar
    • 3 tablespoons rapeseed oil
    • salt
    • freshly ground black pepper
    • 2 tablespoons chopped fresh parsley

    Method

    1. Boil the washed celery for approximately 45 minutes until soft. If you need to cook it quicker or the celery is very big, cut it in half - this halves the cooking time.
    2. Make a marinade from 2 tablespoons lemon juice, 1 tablespoon white wine vinegar, 3 tablespoons rapeseed oil, salt and pepper (lemon pepper tastes also tastes great!).
    3. Cool celery, peel and cut into slices. Mix with the marinade and sprinkle with 2 tablespoons chopped parsley.
