Boil the washed celery for approximately 45 minutes until soft. If you need to cook it quicker or the celery is very big, cut it in half - this halves the cooking time.
Make a marinade from 2 tablespoons lemon juice, 1 tablespoon white wine vinegar, 3 tablespoons rapeseed oil, salt and pepper (lemon pepper tastes also tastes great!).
Cool celery, peel and cut into slices. Mix with the marinade and sprinkle with 2 tablespoons chopped parsley.
