About this recipe: Chocolate mousse is always a hit - even better is when you prepare the chocolate mousse with dark chocolate, but if you have an insatiable sweet tooth, use milk chocolate. The better the chocolate, the more delicious the chocolate mousse.

    Serves: 4

    • 4 egg yolks (use very fresh eggs)
    • 40g caster sugar
    • 4 teaspoons rum
    • 150g best quality dark chocolate
    • 300ml whipping cream
