Basic chocolate mousse

    Chocolate mousse is always a hit - even better is when you prepare the chocolate mousse with dark chocolate, but if you have an insatiable sweet tooth, use milk chocolate. The better the chocolate, the more delicious the chocolate mousse.

    Serves: 4 

    • 4 egg yolks (use very fresh eggs)
    • 40g caster sugar
    • 4 teaspoons rum
    • 150g best quality dark chocolate
    • 300ml whipping cream

    1. Beat the yolks and sugar long and well with an electric mixer until foamy.
    2. Melt the chocolate in a double boiler, remove from heat and allow to cool slightly. Stir chocolate into the egg yolks whilst still warm. Mix in the rum.
    3. Whip the cream and fold into the mousse. Immediately pour into small bowl or serving glasses and set for at least 2 hours in the fridge.
