Quick corn bread

    Corn bread is a bread that's quick to make - much like soda bread - made from a mixture of flour and polenta. Corn bread tastes delicious as a side dish and is great to serve with chilli con carne.

    Serves: 6 

    • 100g plain flour
    • 100g polenta (corn meal)
    • 1 teaspoon baking powder
    • 1 tablespoon sugar
    • 1/2 teaspoon salt
    • 4 tablespoons oil
    • 100g soured cream
    • 100ml milk
    • 1 egg

    Prep:10min  ›  Cook:25min  ›  Extra time:35min  ›  Ready in:1hr10min 

    1. Grease a tin (about 18cm) and preheat the oven to 180 C / Gas 4.
    2. Mix all ingredients to a quick mixture (don't over mix) and place into the prepared tin. Bake in the preheated oven for about 25 minutes. Cut into small squares and serve.
