Easy Custard

    I invented this recipe when I was making baked apples and I had no custard powder in the cupboard. Now I always make custard myself. Don't be surprised if the custard doesn't look as yellow as it does from a packet. The recipe yields enough for 4 baked apples.

    Ingredients
    Serves: 4 

    • 80g sugar
    • 1 tablespoon cornflour
    • 100ml water
    • 30g butter
    • 1 teaspoon vanilla extract
    • 6 tablespoons cream

    Method

    1. Mix the sugar and cornflour in a saucepan. Stir in the water with a whisk. When sugar and cornflour have dissolved, heat it slowly, stirring occasionally.
    2. When the sugar water begins to bubble (almost boiling) and begins to caramelise, simmer for about another minute, stirring constantly - the sugar will now become a syrup.
    3. Remove from heat and stir in butter and vanilla. When all the butter has dissolved, stir in the cream.
    4. Serve warm.
