Easy peasy Greek salad

    I make this Greek salad quite often and with different amounts and types of vegetables - depending on what I have in the refrigerator. The main ingredients are tomatoes, feta and olives, and you can vary the rest.

    Serves: 2 

    • 1-2 peppers, diced
    • 2 tomatoes, diced
    • 1/2 cucumber, diced
    • 1/2 onion, finely chopped
    • 100g feta cheese, diced
    • 15-20 black Kalamata olives
    • For the dressing
    • Juice of 1/2 lemon
    • 3 tablespoons extra virgin olive oil
    • 1 teaspoon dried oregano
    • salt and black pepper to taste

    1. Add the peppers, tomatoes, cucumber, onions, feta and olives to a bowl.
    2. Mix the lemon juice, olive oil and oregano in a cup and pour over the salad. Season with salt and pepper and mix well.
