Ice Cream Christmas Pudding

About this recipe: A delicious chocolate ice cream and fruit alternative to the traditional hot plum pudding. Kids love it and the fruits can be altered to suit your taste.

Ingredients
Serves: 8 

  • 1 litre of your favourite chocolate ice cream, softened
  • 125g finely chopped glace pears
  • 125g finely chopped glace apricots
  • 60g chopped glace cherries
  • 40g sultanas or raisins
  • 60ml brandy or rum
  • fresh or frozen mixed berries, optional

Method
Prep:8hr  ›  Extra time:8hr freezing  ›  Ready in:16hr 

  1. Combine fruit and alcohol and stand, covered, overnight.
  2. Next day, mix all ingredients until thoroughly combined and spoon into 1.5 litre pudding basin or mould. (If preferred grease and line the basin or mould with cling film.) Cover with aluminium foil and freeze overnight.
  3. To serve, stand mould in hot water for a brief moment to loosen the ice cream, then turn onto serving platter. Garnish the plate as you think fit and enjoy your Christmas Day dessert!
