Fried courgette makes for a great side dish to meat or tastes delicious as a light vegetarian main course with salad. You can also serve this as a starter or nibble with your favourite dipping sauces - aioli works a treat!

Peel courgette, remove seeds and cut into slices. Rub on both sides with garlic.
Place flour, egg and breadcrumbs into three separate bowls.Turn the courgette slices first in flour (shake off excess flour), then in egg and finally in the breadcrumbs.
Heat oil in a pan and courgette slices golden brown on both sides in hot fat baking.
