Potato, Egg and Smoked Pork Bake

About this recipe: This easy recipe was passed down from my grandmother to my mother, and as a grandchild it still tastes delicious! We often eat these potatoes with a salad for lunch. If you can't find smoked pork belly, use your favourite bacon.


Serves: 4 

  • 1.5kg potatoes, boiled and cooled
  • 3 hard-boiled eggs, peeled
  • 150g smoked pork belly, sliced thinly by the butcher
  • 150g soured cream
  • salt and freshly ground black pepper to taste
  • butter for the baking dish

  1. Grease an ovenproof dish and heat the oven to 220 C / Gas 7.
  2. Cut potatoes and eggs into slices, and place them and the pork belly pieces in layers into the dish. Top with a layer of potatoes, adding salt and pepper with every layer.
  3. Finally, mix the soured cream with a tablespoon or two of water and pour over the potatoes.
  4. Bake in preheated oven for about an hour.
