You can make this soup from fresh elderberries or from good pure juice, in which case you will need about 1 litre and can start at step 2 in the recipe. A deliciously different soup for hot summer days!

125g caster sugar
1 pinch of salt
1/2 teaspoon cinnamon
zest of 1/2 a lemon
2 pears (from a jar or tin)
125ml white wine

Wash the elderberries and remove the stalks. Bring the water to the boil, add the berries and boil for 15 minutes, then strain through a sieve to reserve the juice.
Mix the elderberry juice with sugar, salt, cinnamon and lemon peel and bring to the boil.
Stir cornflour with wine and mix with the soup to bind. Bring to the boil, beating hard with the whisk.
Cut pears into thin slices and add to the soup.
Season soup with sugar and cinnamon. Leave to cool in the refrigerator or briefly put in the freezer.
Beat cream until stiff and add a spoonful of cream to each portion before serving.
