About this recipe: This is one of the fastest cake recipes I know. You'll find yourself making this moist, delicious cake whenever you have unexpected guests, or when you find yourself in need of a urgent cake fix!


Serves: 12 

  • 200g butter, softened
  • 350g caster sugar
  • 6 eggs
  • 500g plain flour
  • 5 teaspoons baking powder
  • 1 teaspoon ground cloves
  • 3 tablespoons ground cinnamon
  • 250ml strong, cold coffee
  • 125g raisins

Prep:10min  ›  Cook:1hr  ›  Ready in:1hr10min 

  1. Preheat the oven to 190 C / Gas 5.
  2. Beat butter and sugar until light and fluffy. Gradually mix in eggs. Mix in the flour, baking powder and spices, at the end add the coffee and raisins.
  3. Pour into a greased cake tin and bake for 1 hour in preheated oven (in a tube cake tin, it's a bit faster), until a skewer comes out clean

horrible total disaster Don't know if I did something wrong but it took ages to cook,the fruit sank to bottom of cake, it split right down the centre totally gutted :-( - 01 Apr 2013
