Pear and Roasted Walnut Salad


    This is one of my favourite recipes for a tasty autumn / winter salad. I love the contrast of sweet, ripe pears and a spicy vinaigrette. I used lollo rosso but you can use any other kind of lettuce. A fresh baguette goes really well with it.

    Serves: 2 

    • 75g chopped walnuts
    • 1/2 lettuce, such as frisee or lollo rosso
    • 2 ripe pears, cored and diced
    • 25ml olive oil
    • 25ml balsamic vinegar
    • 1 teaspoon dried oregano
    • freshly ground salt and pepper to taste

    1. Toast the walnuts in a dry pan over medium heat until golden-brown. Mind they don't get too dark or they will turn bitter.
    2. Tear the lettuce into bite-sized pieces and place on two serving plates. Dice the pears and lay on the salad. Sprinkle the roasted walnuts on top. Drizzle with the vinaigrette and serve immediately.
