About this recipe: This easy salmon recipe is one of my trademark dishes. My family asks for it weekly. Salmon fillets are briefly pan-fried, then topped with a delicious lemon and mint breadcrumb mixture. The whole lot is baked till the salmon is beautifully flaky.


Serves: 4 

  • 750g salmon fillets, with skin
  • 1 lemon, zest and juice
  • 1 slice multi-grain bread
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 garlic cloves, peeled
  • 1 small handful fresh mint
  • 1 pinch cayenne pepper
  • 2 tablespoons extra virgin olive oil

  1. Preheat oven to 200 C / Gas 6.
  2. Drizzle the fish with the lemon juice.
  3. Finely process the multi-grain bread, salt, pepper, garlic, mint, cayenne and lemon zest in a food processor (you can also chop everything by hand, but it has to be very finely chopped).
  4. Heat olive oil in a pan and fry the salmon with the skin side up for 3-5 minutes over a medium-high heat. Place in an ovenproof dish with the skin down. Spread the bread mix over the salmon and press down lightly. Cook for 15-20 minutes until the fish breaks easily with a fork and the crust is brown. If the fillets are thick, they'll need a little longer. Then lay a piece of aluminium foil over them so that they don't burn.
