About this recipe:This is a delicious and different way to prepare sauerkraut. Perfect with mash and good sausages. You don't have to use a good wine as you'll be drinking a bottle of wine anyway...it just has to be dry, sweet wine will just not do. Cheers!
2 tablespoons butter
3 onions, chopped
1 large sweet apple, peeled and coarsely grated
500g sauerkraut, drained
1 1/2 teaspoons juniper berries
1 1/2 teaspoons black peppercorns
3 bay leaves
250ml white wine

Heat the butter in a heavy medium saucepan. Fry onions until translucent.
Mix in the apple, sauerkraut, herbs and wine well, and simmer in the covered pan for 45 minutes. Check back every now and then to make sure there is enough liquid in the pan, adding more water if necessary. If there is still liquid in the pan after the cooking time, simmer for a while with the lid removed. The kraut should not allowed to get too dry though. Remove bay leaves and serve.
