Cut open the vanilla bean from top to bottom and scrape out the seeds.
Beat together 90ml of the milk, cornflour and egg yolks. Bring the remaining milk, whipped cream, vanilla seeds, scraped vanilla bean, sugar and salt to the boil in a pan. Beat in the cornflour mixture with a whisk, bring to the boil again and remove from the heat. Allow to cool slightly.
