Aah, raclette! I've just come back from Switzerland and in my new-found passion for cooking, I had to ask for the recipe. Although this isn't a recipe per se, but rather a list of foods which has been lovingly put together. As most people don't have a campfire or a fireplace for a half a block of cheese, I'm adapting this recipe for a raclette grill.

    Serves: 6 

    • 250g raclette cheese per person, sliced
    • 3-4 small waxy potatoes per person, boiled in their skins
    • 50g Bündnerfleisch (Swiss air-dried beef) per person
    • 50g ham per person, such as Prosciutto
    • 1 jar gherkins
    • 1 jar pickled onions
    • freshly ground black pepper
    • 1 pot of tea

    1. Place all the ingredients on small plates. Place onto the dining table with the raclette grill.
    2. Invite good friends around your table.
    3. Serve black tea.
    4. Each guest receives a raclette tin.
    5. Place the cheese into the small tins and let melt on the lower grill till lightly browned.
    6. Pour melted cheese onto the plate with a piece of potato and eat bites of the other lovely ingredients here and there.
    7. Eat, drink and chat until everyone is happy, full and satisfied.
