About this recipe: A simply delicious recipe consisting of spaghetti and salmon in cream sauce. This is a perfect midweek supper, satisfying fare ready in just under 30 minutes. You can use other types of pasta, of course.

Serves: 4

  • 60g butter
  • 60g flour
  • 475ml milk
  • 300g fresh salmon, cut into bite-size pieces
  • double cream to taste
  • salt and freshly ground black pepper to taste
  • 500g spaghetti
  • freshly grated Parmesan cheese to serve
  • chopped fresh dill to serve

Prep:5min  ›  Cook:20min  ›  Ready in:25min

  1. Cook the spaghetti in salted water according to packet instructions until al dente and drain.
  2. Melt butter over low heat and mix in the flour slowly and stir until smooth. Add the milk while stirring constantly. Next, add the salmon and simmer for 5 minutes. Season the sauce with salt and pepper to taste and add cream to taste.
  3. Drain spaghetti well put into a warm bowl. Put the sauce over the pasta and toss well. Sprinkle with Parmesan cheese and dill and serve immediately.

This is a great way to use tinned red salmon, which is typically cheaper than fresh.

Just made this for lunch and it was way too bland! There's not enough flavour in the salmon alone and if I made it again I'd add a vege stock cube to the sauce. Disappointing. - 29 Mar 2013
