Sweet and sour broccoli salad

    This is a fast and crunchy salad. The raw broccoli may seem odd, but it has a lovely fresh flavour and a fantastic crunch. Vegetarians can just leave out the bacon - it tastes great even without it.

    Serves: 4 

    • 500g broccoli, chopped
    • 1/4 red onion, chopped
    • 125g raisins
    • 200g mayonnaise, or to taste
    • 3 tablespoons vinegar
    • 2 tablespoons sugar
    • 125g bacon
    • 120ml sunflower seeds

    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Mix raw broccoli, onion and raisins.
    2. Mix the mayonnaise with vinegar and sugar. Mix dressing with the broccoli and allow to infuse for awhile at room temperature.
    3. Finely dice the bacon and fry in a frying pan until crispy. Toast the sunflower seeds with it towards the end of cooking. Just before serving, sprinkle over the broccoli salad and serve.

    Just the best salad - haven't met anyone who doesn't love it! I sometimes use half mayo and half natural unsweetened yogurt for the dressing and don't add the vinegar and sugar. (a lighter dressing)  -  06 Dec 2016  (Review from Allrecipes AU | NZ)
