    About this recipe: Luscious raspberries are briefly boiled to bring out their juices, then combined with sugar to make a ruby red sauce. Served warm over ice cream, it is a great dessert for a romantic dinner for two, which is a lot easier than it seems.

    Ingredients
    Serves: 2 

    • 1 small pack frozen raspberries
    • sugar
    • 4 scoops good vanilla ice cream
    • whipped cream (optional)

    Method

    1. Bring the raspberries to the boil in a small pan to draw out the juice. Strain through a sieve and add sugar to the juice to taste (you can also prepare the sauce whenever you like and reheat it later).
    2. Put two scoops of vanilla ice cream into a sundae glass and pour the hot sauce over it. If you like, add whipped cream. Serve immediately.
