    About this recipe: Nasi Goreng, literally meaning "fried rice" in Indonesian and Malay, is simply fried rice, a meal including fried rice accompanied with other items, or a more complicated fried rice, typically spiced with tamarind and chilli and including other ingredients, particularly egg and prawns. There are many, many variations of this recipe!

    Ingredients
    Serves: 4 

    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon treacle or dark brown sugar
    • 4 boneless, skinless chicken breasts, diced
    • 1 onion, finely chopped
    • 3 tablespoons vegtable oil
    • 300g long grain rice
    • 2 teaspoons tumeric
    • chicken stock to cover
    • 100g frozen peas
    • 60g baby corn
    • 1 red pepper
    • 1 tablespoon mild curry powder
    • 25g unsalted peanuts

    Method
    Prep:20min  ›  Cook:15min  ›  Extra time:30min marinating  ›  Ready in:1hr5min 

    1. Mix the soy sauce, sesame oil and treacle and marinate the diced chicken in the fridge for 30 minutes.
    2. After 30 minutes (or longer if you have time) drain the chicken a little and then fry it. Then leave to the side for a moment.
    3. Sauté the onions in the oil until soft, then add the uncooked rice and 2 teaspoons of tumeric and stir.
    4. Add the chicken stock to cover and leave to boil (add the stock bit by bit so you don't put too much in).
    5. Once the rice has soaked up most the stock you can add the frozen peas.
    6. Now add the baby corn, red pepper, chicken and mild curry powder and the leftover marinade. Once all is cooked add the peanuts and serve.

    Tip

    You can also use packet rice (the ones you can microwave) that can make it quicker.. or use leftover rice

    Additions

    Some like to have a fried egg on top or sliced thin omelette style egg. You can make this omelette by pouring 1/2 a beaten egg to make a really thin omelette, then slide out. Repeat, then roll both omelettes up together and slice into ribbons. (Probably best to do this at the beginning.) Also you could add prawns if you wanted.
