Chicken supreme

    Diced chicken, with peppers and mushrooms in a creamy white sauce. Serve with cooked white rice. I usually use a packet of Uncle Ben's® microwave rice.

    Serves: 4 

    • lots of closed cup mushrooms, chopped
    • large knob butter
    • 2 red and/ or green peppers, chopped
    • 450g (1lb) cooked diced chicken
    • 1 packet Coleman's® white sauce, made up with milk
    • 1 pinch paprika, or to taste

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Fry mushrooms in butter for a few minutes until soft. Add peppers and fry until soft. Add chicken and cook together in butter.
    2. Add mixture to white sauce and heat through.
    3. Add paprika to taste; heat through.
    4. Serve on a bed of cooked white rice.


    This can be made using pre-cooked chicken such as the leftovers of a roast. Just make sure it's heated throughly in step 3.

    Freezing tip

    This freezes very well, but the rice doesn't.

    Use for leftovers

    You could substitute turkey for the chicken as a way of using up leftovers from Christmas.

    this was perfect i swapped the peppers for bacon because i do not like peppers  -  05 Sep 2011


    I made this and it was yummy, I left out the peppers as my hubby does, nt like them, but it was lovely and very easy to make  -  28 Sep 2015
