About this recipe:
Diced chicken, with peppers and mushrooms in a creamy white sauce. Serve with cooked white rice. I usually use a packet of Uncle Ben's® microwave rice.
lots of closed cup mushrooms, chopped
large knob butter
2 red and/ or green peppers, chopped
450g (1lb) cooked diced chicken
1 packet Coleman's® white sauce, made up with milk
1 pinch paprika, or to taste
- Fry mushrooms in butter for a few minutes until soft. Add peppers and fry until soft. Add chicken and cook together in butter.
- Add mixture to white sauce and heat through.
- Add paprika to taste; heat through.
- Serve on a bed of cooked white rice.
This can be made using pre-cooked chicken such as the leftovers of a roast. Just make sure it's heated throughly in step 3.
This freezes very well, but the rice doesn't.
Use for leftovers
You could substitute turkey for the chicken as a way of using up leftovers from Christmas.
this was perfect i swapped the peppers for bacon because i do not like peppers

I made this and it was yummy, I left out the peppers as my hubby does, nt like them, but it was lovely and very easy to make
