About this recipe: A simple recipe that is pretty much undetectable as gluten free. Try it see if any one realises. It rises better than the normal cake too.

Serves: 8 

  • 150g (6oz) brown rice flour
  • 150g (6oz) Stork® margarine or similar
  • 150g (6oz) caster sugar
  • 1 tablespoon gluten free baking powder
  • 2 tablespoons milk
  • 3 eggs
  • a few drops vanilla extract

Prep:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Preheat the oven to 190 C / Gas 5. Grease and line 2 (18cm) sandwich pans.
  2. Put all ingredients into a bowl and whisk with an electric whisk for 2 minutes. Divide the mix between the two tins.
  3. Bake for 25 minutes.
  4. Turn out onto a wire rack to cool, then sandwich together with jam and / or buttercream.


Every Holland and Barrett sells brown rice flour.

Other ideas

You can also use the mixture to make fairy cakes or sponge puddings. I've make lovely butterfly cakes with a 2 egg quantity of this mix.

Serving suggestion

Add lots of pretty icing to make this into a birthday cake.


Replace 1 tablespoon of the flour with cocoa and sandwich with chocolate icing for a chocolate cake.

I made this today for my Mum's birthday, she is gluten intolerant. It really was delicious! Everyone said it was delicious and I will definitely be making it many more times now I have found a great recipe. I made a buttercream for the middle and added strawberry jam, there is only a tiny bit left! Thanks very much for posting this, cant recommend it enough, give it a go.
