- Bring a saucepan of water to the boil and add chopped potatoes. Cover and leave on low-medium heat until potatoes are soft.
- Meanwhile, cut lemon in half and squeeze one half over chicken breasts. Finely chop thyme and lightly sprinkle over chicken breasts. Then place chicken on grill on medium-high heat. Cook until slightly browned on both sides.
- Add chopped tomatoes and red wine vinegar to a bowl and toss through a few leaves of finely chopped basil.
- When potatoes are ready, remove from heat, drain water, add to bowl along with sour cream, milk and butter. Then mash until smooth and fluffy. Add salt and pepper to taste.
- Scoop mash potato onto a plate. Place chicken breast on top of mash. Squeeze the other half of the lemon over chicken breats. Then place tomato and basil mix over chicken.

Add peas, corn and/or diced carrotts to the mashed potatoes. To do this steam the desired vegetables and stir them through the potatoes after they have been mashed.

Refrain from adding sour cream to the mash and use heart smart, salt reduced, low cholesterol margarine instead of butter.
Tip
Thick pieces of chicken can be hard to cook through evenly. Either choose thin chicken breast or flatten your chicken by hitting it with a fry-pan (be careful not to break the handle lol).
