About this recipe: This is a low calorie, low fat fish dish with an onion and tomato sauce. Serve with cinnamon and salted boiled potatoes.

Serves: 2 

  • 1 large white onion, chopped
  • 1 tablespoon olive oil
  • 1 tin chopped tomatoes
  • 1 tablespoon dark brown soft sugar
  • 1 teaspoon dried thyme
  • 1 tablespoon soy sauce
  • 1 teaspoon dried basil
  • 2 large cod, pollock or haddock fillets, smoked or unsmoked

  1. Brown the onion in the oil on a medium heat in a frying pan. Add all ingredients but the fish and bring to the boil. Simmer for a further 5 minutes, add the fish and cook for a further 10 minutes.
