Vanilla cupcakes with vanilla frosting

    An easy recipe for when the kids come home from school. Vanilla cupcakes can be iced or eaten as they are.

    Serves: 12 

    • 160g softened butter or margarine
    • 160g caster sugar
    • 3 medium eggs
    • 1 teaspoon vanilla extract
    • 160g self-raising flour, sieved
    • 1 to 2 tablespoons milk, or as needed
    • For vanilla frosting ingredients
    • 110g softened butter or margarine
    • 320g icing sugar, sieved
    • 2 to 3 tablespoons milk, or as needed
    • 2 to 3 drops vanilla extract

    1. Preheat the oven to 180 degrees C /350 F/ gas 4. Place paper bun cases in a muffin tray.
    2. Cream 160g butter and caster sugar until pale.
    3. Whisk eggs and 1 teaspoon vanilla extract in a separate bowl and gradually add to the sugar and butter mixture.
    4. Carefully fold the flour into the cake mixture, then add the milk.
    5. Place mix in the cases. Bake for 15 to 20 minutes, or until golden brown and the cake springs bake when touched.
    6. For the icing: Beat 110g butter in a bowl. Add a little of icing sugar at a time until smooth and creamy. Add milk and whisk. Add a few drops vanilla extract and whisk again.
    7. Spread frosting on cupcakes when they are cool to touch. Decorate with your choice of sprinkles.
