French chocolate cake

    This is a very rich, very tasty chocolate cake that's a great dinner party dessert! It's nearly flourless.

    Serves: 10 

    • 250g dark chocolate, chopped small
    • 125g unsalted butter, chopped small
    • 90g caster sugar
    • 2 tablespoons brandy
    • 5 eggs
    • 1 tablespoon self-raising flour
    • icing sugar for dusting

    1. Preheat the oven to 180 C / Gas 4. Grease a springform tin and line with non-stick baking parchment and grease. Wrap foil around the outside of the tin.
    2. Melt the chocolate, butter and sugar over a low heat. When smooth, cool slightly then add the brandy.
    3. In a large bowl, beat the eggs for a minute and then beat in the flour before slowly beating in the chocolate mixture. Pour into the tin.
    4. Place the tin in a large roasting tin and fill with about 2cm boiling water. Bake for 30 minutes.
    5. Remove the tin and take off the foil. Cool on a wire rack. Remove the tin from the cake and take off the baking sheet. Cool again until cold.
    6. Cut thin strips of baking parchment and lay in a criss-cross pattern over the top of the cake, leaving gaps. Sprinkle icing sugar over and then remove the strips to give a professional finish.


    When the cake is baking DO NOT open the oven door to check it. This will cause the cake to sink in the middle and will make it crumble when served.
