Makes: 500 g approximately

  • 1 green pepper, seeded and quartered
  • 1/2 red pepper, seeded and halved
  • 1 large ripe tomato
  • 1 medium red onion, peeled
  • 1/2 head garlic, peeled
  • 1/2 bunch fresh coriander
  • 1/4 bunch fresh flat leaf parsley

  1. Place all of the ingredients into a food processor and blitz until smooth. Transfer to a glass jar and store in the refrigerator until needed.
