Strawberry cream cheese

    This is a sweet, light and fruity spread of cream cheese blended with fresh strawberries. It's delicious spread on toasted bagels, thick toasted granary bread and more.

    Makes: 500 g approximately

    • 300g extra light cream cheese, such as Philadelphia
    • 2 tablespoons icing sugar or to taste
    • 175g fresh ripe strawberries, hulled

    1. In a liquidiser or food processor, blend the cream cheese, icing sugar and strawberries until smooth. Refrigerate until needed.

    Wow! I'm pleasantly suprised at how good this is - it's so incredibly easy with so few ingredients! I cut the recipe in half and added the confectioners' sugar to taste. I processed half the strawberries and chopped a few folding them into the cream cheese mixture as I like them "chunky". This was so good over top fresh bagels and as a fruit dip.     Great for dipping fruit! although I found myself without confectioners sugar, so I just blended normal granulated sugar and strawberries first to let the sugar dissolve. Then I added the cream cheese. spread turned out nice and smooth.  -  03 Oct 2007  (Review from Allrecipes US | Canada)
