About this recipe:This is a deliciously hearty Chinese noodle dish. Noodles are topped with stir-fried pork and shiitake mushrooms in a spicy sauce. Feel free to adjust the spiciness of the dish to your liking.
500g fresh noodles
1 1/2 tablespoons vegetable oil
200g lean pork, finely diced
3 dried shiitake mushrooms, soaked until soft, diced and 4 tablespoons soaking liquid reserved
2 spring onions, chopped
2 tablespoons fermented soybean paste
3 dried chillies
chicken stock granules, to taste

Cook the fresh noodles in boiling water until al dente (about 6 minutes), drain and place into a serving bowl.
Heat the oil in a wok or frying pan, add the pork and stir fry until the colour changes.
Add the spring onions and dried chillies and stir-fry for 1 minute. Add the mushrooms and toss few times. Add the soybean paste and stir-fry for 2 minutes over low heat.
Pour the mushroom soaking liquid in and cover the pan. Simmer for about 8 minutes until the sauce has thickened.
Season with chicken stock granules. Pour the sauce mixture over the noodles and serve.
Dried shiitake mushrooms and fermented soybean paste can be purchased in Chinese/Oriental speciality shops or online.
